tabular (standard, fits on one page) and longtable (for tables that span multiple pages).

Are special LaTeX characters escaped?

Yes, by default. Characters like &, %, $, #, _, {, }, ~, and ^ are escaped to their LaTeX equivalents. You can disable this if your cells contain LaTeX commands.
